Tarhana soup, which is widely cooked in Anatolia, is made with different ingredients in the plain and mountain regions of Bursa. This soup, which is also called “Milky Tarhana”, is one of the nutritious flavors of traditional Bursa cuisine.
Tarhana soup is made with tomatoes, green peppers, flour, chickpeas, cracked wheat and salt. Besides milk is used in the soup with the difference of other regions. The milk is firstly kept for 4 days and added to the soup. Spices, which are called “the smell of tarhana”, used in this soup. It is made especially in summer.
