Borek (a pastry filled with mince, potato, spineach or cheese) has taken its place in Bursa's culinary culture with the names of kapak böreği (lid pastry), kol böreği (rolled pastry), Arnavut böreği (Albanian pastry), çarşaf böreği (flat pastry), tava böreği (pan pastry), su böreği (pastry with feta cheese), gül böreği (rose-shaped pastry).
Handmade börek is prepared using various stuffing ingredients such as cheese varieties, minced meat, potatoes, eggplant, spinach, leek, wild herbs, etc. by women who are skilled in pastry making and can cook "tastefully" in daily life and on special occasions, and commercially by professional pastry masters, on special occasions and holidays, at "community meetings" in daily life, at breakfasts and tea hours. It can be cooked by placing it on a tray and turning it upside down in the oven or on the stove.
It was proposed by the Provincial Research and Survey Board in 2019.
