Bursa has two large lakes such as Iznik Lake and Uluabat Lake, where many fishes and different species live. “Kepekleme” fish, which is give the name of “Kepekleme” stew, is a river and lake fish. It is a local taste known and made by local people and restaurants, especially on the shores of İznik and Uluabat lakes of Bursa.
The fishes, which is used in the preparation of the dish, are lined up in a saucepan, after they are cleaned. Parsley, peppermint, tomato, green pepper, onion and lemon are placed on the fishes and then olive oil is poured on them. The remaining fishes are lined up on the ingredients and the same vegatables are placed on them. This flavour is served, after baked in the oven.
