Artichoke, which is widely grown in Bursa, is the highest quality Artichoke of Turkey. The artichokes are picked in May and June, which are the harvest times, and cooked as fresh.
The spiny of leaves of artichokes are cut and thrown into salt and lemon water. In addition; rice, scallion, parsley, onion and black pepper are roasted with olive oil. Prepared the cooking base is filled in the artichokes and olive oil is poured over them and then, they are cooked. This flavour is served as a cold in famous and traditional restaurants of Bursa.
